Christmas Vacation! – San Marcos Edition

Ok so I’ve not had a second to sit down and update this thing in a good while so here we go! Last week we had Christmas at our house here in San Marcos. Cody’s parents came down with his grandmother and we had Christmas lunch/dinner here on Friday.  Isaac had a great time with all his relatives and opening his “pwesents!” With all the photos and goings on I’m gonna have to split the posts into a few segments here. Starting with this one, the San Marcos Edition.

Christmas Eve, we decided to go ahead and open presents so we could focus on everything else the next day with cooking and everything. I got a new 10 inch skillet, a wooden wand, and these epic gloves:

The next morning we woke up FREEZING cold, mostly because it was freezing outside. I give you proof:

We woke up and let Isaac open his gifts from Santa. He was so excited when he opened up his favorite present of the year: A Thomas The Tank Engine set:

After presents I made breakfast, Christmas tree shaped cinnamon/pecan pancakes with bacon and eggs:

and we played toys a while. That afternoon Cody’s mom cooked up dinner: The ham was astoundingly good and super juicy, I had a slice of it straight out of the oven that was so good I couldn’t stand it.

Of course it wouldn’t be Christmas without candy canes, which Isaac was more excited about than the presents to tell you the truth:

So it’s the week or so before Christmas and what have I been up to? All kinds of stuff! Last week at work we had our DC Christmas party. It was basically the same as our Thanksgiving party save for this time they had Mexican food catered from a local place in San Antonio. It smelled good and all and I took lots of pics but I dared not eat any for absolute fear of ninja butter and such. (I bring my own food :D )

Empanadas

They brought some beef empanadas, much like tfp’s curry puffs but Mexicans make them hahaha.

Fajitas

There was beef and chicken fajita meat, tortillas, borracho beans and rice, all the fixins for nomy fajitas. :D It wasn’t until everyone was in line for food that we began to hear music. At first I thought it was someone being funny due to the Mexican food, I was so excited to see THIS in the hallway at the end of the buffet table:

A full Mariachi band, who played through most of the lunch ahhaha. They were pretty good and played christmas songs and stuff. :D

This weekend was spent pretty much cleaning up the house and garage. I got all the laundry done really good and Cody and Matt managed to clear up the garage enough to get Cody’s 240 in there! I had to steer it in while they pushed haha. We had to get it moved inside before Cody leaves on his work trip, plus he got a window ticket on it for having a “junk car” sitting in the yard. >_< For Christmas he is getting machine work done to the KA up in East Texas, which means we are bringing components with us to Christmas dinner at Aunt Susan’s. XD

After a busy day of moving cars and such I got up early to make breakfast. The night before I saw pics of TFP’s mini pancakes she is going to make for Christmas breakfast at their house. I thought to myself: “Bah, I don’t need a fancy waffle iron to make tiny pancakes!” So I used a teaspoon measure and blobed them all on the griddle. The hard part about this is that the tiny pancakes cook REALLY FAST so you gotta plop em on and flip em quicks!

Tada! Mini pancakes! They were pretty good, even Isaac ate all of his! That night my throat and cough were getting worse so Cody suggested Pho for dinner, which, I never say no to XD.

Soup

I have to work all this week save for Friday. Cody’s parents are coming down Wednesday and we will probably eat dinner Thursday night, they wanna cook a ham. I don’t care what they cook as long as I can have shrimp cocktail. I’ll probably go buy shrimp and cooking components tomorrow when I go to the grocery store. :D I still have a few folks to buy for tomorrow, I ordered a few things this weekend on amazon which claims they will arrive at the house christmas eve. Lets see how that goes :D .

NOTE: I have a photo of Isaac with santa, im gonna ask Daycare to send me the JPEG of the pic they took. (Santa visited daycare last week XD)
